Why not cool off with some popsicles that you can create at home!
I found that the regular popsicle molds may be cool and fashionable, but they can be messy and hard to eat. For my customers in a drive-thru, I figured a sticky coffee mess when you're driving wasn't a good idea. Have you ever tried to eat a taco while driving? Good way to get in a fender bender and get shredded lettuce in those impossible to clean crevices of your car. We don't need any coffee catastrophes on the road! To avoid this, we used the ZIPZICLE zipper lock popsicle bags.
Here are a few recipes for the popsicles we make at the cart. Get creative with yours! If you want something more ice cream textured, use equal parts milk or non-dairy milk to your other flavors...For a more fruit style popsicle, make sure to use a blender or food processor and plenty of fruit and juice or liquid with water in it to give it a good ice structure...
I've heard of people adding booze to them too, just remember it is really hard to freeze pure alcohol. If you want that booze kick try using a rose wine or something with lower alcohol content. DISCLAIMER: MAKE SURE TO LABEL YOUR BOOZY POPSICLES AND KEEP OUT OF REACH OF THOSE UNDER 21!

Cold Brew - Oat milk- popsicles:
1 part (about 8oz) cold brew coffee concentrate
You can make your own, or if you can't get concentrate, use just a little bit more of the bottled stuff if you want that caffeine kick.
1 part (about 8oz) Oat Milk or Heavy cream
2oz of flavored syrup - I prefer kahlua flavor that we make at the cart, but vanilla, caramel , or irish cream all work too. Just make sure you are using a flavored syrup (like what is added to lattes) and not flavor extract (like what is used in baking).
Yerba Mate - Strawberry Lemonade - Popsicles
2 oz of strong brewed Yerba Mate Tea
1/2 cup of chopped strawberries. Or you can use the strawberry dessert topping if you want a little sweeter.
12 oz of lemonade
Add all ingredients into a blender and blend until strawberries are integrated into lemonade. Add more strawberries if needed to achieve cool pink color.
ASSEMBLING THE POPSICLES
Mix all ingredients in a pitcher, jar, or some container easy to pour out of. Using a small kitchen funnel, pour the mix into the Zipzicle to the fill line. Once you have them all filled, freeze for about 4-5 hours or until solid.
Enjoy by the kiddie pool, or in your rockin AC!
